Well this week has been less than stellar. I know, such a pitiful way to start a post but it's true. Ronin caught a nasty cold which turned into croup (even the word sounds gross) and he had his very first ER visit over the weekend because of it. So scary! And since it's almost impossible to keep the two brother's separated Max now has something ugly too. I have been taking oil of oregano, apple cider vinegar and a bunch of homeopathic meds my step-mom brought over and so far I think I am in the clear but my poor babies.
Since all I can do right now is snuggle my boys (not complaining about that) and watch Despicable Me and UP for about the 30th time I decided to share some of my family's favorite past fall recipes...
Flourless (super low carb) apple cinnamon muffins
Grain free chocolate granola (Paleo)
The two minute pumpkin pie (Paleo)
Butternut squash hummus
Baked parsnip fries

Ugh, that SUCKS! And how scary to be at the point where you're going to an emergency room. Terrifying!
I've been craving muffins somethin' fierce the last couple of weeks, so since my muffins pans are still packed away, I bought some of those disposable ones. Literally pulled blueberry muffins from the oven about 15 minutes ago. They were TOTALLY worth it.
I want those parsnip fries. Yum!

Thanks for sharing all the yummy recipes. So sorry the boys are both feeling yucky. My girls used to get it quite often when they were young, then were diagnosed with reactive airway disease (a form of asthma). A couple things that help...run a hot shower in a smaller bathroom (one that steams up easily)...then let the boys sit/play/read in there (the steam helps open their airways). Mine loved drawing pictures on the steamy mirror. Whatever works. Also, sometimes cool night air works better. We used to drive around the block with the windows down or sit on the porch and read books. Not sure how cool your evenings are quite yet. And, a cool mist humidifier in their room will help as well. We always found the 2nd to 3rd day was the worst, then they gradually got better.

Oh Lindsay, I hope the boys get better soon...that's the worst. :( On a lighter note, these all look so yummy, especially the 2 min pumpkin pie!
