Apple Pie Energy Snacks (no bake)

Twit.  That's a funny word right?  I was called that by an anonymous commenter the other day and it made me laugh.  Who even says that word ha!?  On another note, teething is basically the worst thing ever.  It is taking over Ronin's life and he is not sleeping one bit. The poor little guy wants to chew the heck out of whatever is in mouth range and I am pretty sure people think I am starving him when he starts trying to eat the grocery cart.  I mean really, 6 teeth at once seems a little extreme right?  So I am typing this post as fast as I can because I know in about 10 minutes I am going to hear a screaming baby who needs his Momma.

So let's get to these weird looking little snacks.  Do not judge them based on how they look because they seriously taste like bites of apple pie heaven and are packed full of good for you energy boosting ingredients.  They are also super easy to make and take only about 5 minutes to make start to finish.
 

What you will need:
  • 1 cup of pitted dates
  • 1/2 an apple (use whatever kind is your favorite)
  • 1 tsp of cinnamon 
  • 1/3 cup of whole roasted flax seeds
  • 1/2 tsp of vanilla
  • 1/2 cup of almonds
  • 1 tbs of melted coconut oil
Directions:
  1. Throw everything into a food processor and blend until all the ingredients are able to stick together and you have a thick chunky dough like consistency. 
  2. Form little balls of the mixture and place on a parchment lined cookie sheet.
  3. Keep them in your fridge until you are ready to eat.  You can also eat them at room temperature but I like these best super cold.  
My husband said these were, "dank-ilicious."  Ya he really did say that ha!  Please come back and let me know what you think if you make them!

Yum!!!! Are the flaxseeds whole or ground? I assume I can just toast them like I do coconut - in the oven or on the stovetop?

I know how you feel about teething, my 11 month old is teething too, I think he's getting four teeth in at once :(. Poor little guys. Hopefully their teeth will break through quickly and we all can get some-what better rest :).

Haha Twit? That is pretty funny. Doesn't sound like they were being nice though. Oh, and yes teething sucks. Sean is doing the same right now. He has 4 teeth with 3 more on the way. Our poor little men =(

First of all someone called you a twit?? What the heck? So unnecessary and just weird! Second, so sorry about little Ronin! Mila's whole first year was consumed with getting all of her teeth. Finally after she was done I was like...oh my gosh, you are a happy fun little kid after all! Ha. These look delish...perfect for an always starving pregnant lady! :)

Oh, poor Ronin! My little got 6 in within a month and (fingers crossed on the next ones)weathered the storm pretty well beyond a slight fever and lots of chewing. He was just under 6 months though so perhaps he didn't know he was supposed to flip out. Hope they come thru quickly! = )

What is WRONG with people? A "twit"? Seriously? Anyway, these apple snacks look amazing. Do they taste anything like the Lara bars (I think it's apple pie)? Because if so, they are delicious! LOVE your recipes!

I dont believe they are 5 minutes from start to finish. How long did it REALLY take you? Measuring, assembling, clean up etc?

whole roasted flax seeds - how long do you roast yours for (at what temp) and is the difference just in taste or health properties?

Danielle- I buy them whole roasted. In my opinion the roasted ones are so muh better tasting.

I like the fact that they don't have to be baked. Sometimes it's good to just have a healthy snack that can be prepared and eaten without cooking. Bit of raw food is good every now and again.

I don't have the flax seeds but I do have the other ingredients. I could probably substitute some other seeds or nuts for the flax.

If chia is used to replace the flax, do you still have to roast them? I've never heard of roasted chia seeds, but just wondering if it would make a difference if they weren't.

I substituted chia for flax, didn't roast. Recipe total time 10 minutes including rolling. Made a graham cracker crumb crust in the quisenart and rolled balls into it. Everyone in the family loved them! Great recipe! You rock!
