The Two Minute Paleo Blueberry Muffin

I am usually am not a huge breakfast person.  My morning breakfast routine almost always consists of a a cup of coffee and a green smoothie, but the other morning I woke up craving a blueberry muffin like nobodies business.  Morning time is crazy time around my house and there was no way I had time (or felt like) making a big ole batch of muffins.  I wanted just one.  I did a little experimenting and used my mug cake recipe as a base and WOW!  Is it weird to say I blew myself away with this recipe?...Ya probably.

What you need:
  • 3 tbs of almond meal
  • 1 tbs of honey
  • 2 tbs of unsweetened applesauce
  • 1 egg
  • 3 tbs of bluberries
  • a dash of salt
  • 1 tsp of vanilla
  • 1/2 tsp of baking powder
Directions:
Mix everything up together in a microwave safe bowl.  Microwave for 2 minutes.  Enjoy!

*For those of you who are going to say you hate the microwave (there is a whole clan of microwave haters) you can try baking this for 15-20 minutes.

*If you are allergic to almond meal you can use coconut flour.  Keep in mind the consistently will be slightly different.

This totally hits the spot.  It was good...so so good.

Yum! This looks delicious! If I were to make my own almond meal by grinding up raw almonds, how many almonds should I use to get the amount for this, 3 tablespoons?

Christal- Off the top of my head I am not sure how many almonds ground up would equal 3 tbs. Maybe 1/2 cup?

So I made it yesterday and I used coconut flour... it was delicious but too dry, do you think I should add more applesauce? maybe some greek yogourt?

Like I said above coconut flour will change the consistency (make it more dry). I wold suggest using almond meal like the recipe calls for if you are not allergic or try adding a tad more applesauce. Hope that helps!

If you use coconut flour, you definitely won't want 3 Tbsp- coconut flour is way more absorbent than almond meal.

I made this just now with mashed up banana instead of applesauce, half of the honey, and I added cinnamon and 1 Tbsp melted butter too. I love the custardy consistency! This is a good base recipe for mug cakes that I'll probably use again.

LOVE this recipe! I used almond milk instead of applesauce (I didn't have any) and 1/2 the honey but added monkfruit sweetener. I could eat like 7 of them but that would totally defeat the purpose! Thank you Lindsay!

I made this three times now and each time the top was perfect but the bottom was very moist almost wet. I can't figure out what I'm doing wrong. Does yours turn out the same way? What type of dish are you using?

I made this with almond flour. I did not have any applesauce; however, the dish was awesome...topped with walnuts before baking for about 15 minutes. Yummy

OMG! This just saved my life (er, all my hard work)! Searching the internet for something to do Paleo with some blueberries that need to be eaten in the fridge to satisfy my sweet craving and found this. I was this close to eating a praline I found in the fridge, even after a brutal day that included spin class and a does of an Insanity workout.

Alas, I avoid even honey/maple syrup/agave, so I used 1/4 of an overripe banana (I keep them as sugar in my fridge/freezer) instead, and loaded up on the blueberries.

Um, can you say ridiculously good? I know I did, even with my mouth full of awesome 2-minute muffin. You should be given instant sainthood. Bless you.

I have made this quite a number of times now and always had success. I've changed the flour / meal - almond/ rice/ hazlenut/ coconut/ cornmeal or combinations of the above. I've changed the fruit - mashed banana, applesauce, strawberries. My all time favourite is Choc-Hazlenut Strawberry Muffin
1 tbsp almond meal
1 tbsp hazelnut meal
1 tbsp rice flour
1 tbsp cocoa
1/2 tsp of baking powder
pinch of salt

3 tbsp of diced strawberries
2 tbsp of unsweetened applesauce
1 tbsp of agave nectar
1 egg
1 tsp of vanilla

Combine the dry ingredients in a microwave safe bowl. Lightly coat the strawberries with dry ingredients and set aside. Add wet ingredients and mix well. Gently stir thru the coated strawberries. Microwave for 2 minutes.

Made this several times now...my favorite way is to use strawberries instead of blueberries. Definitely need to beat the egg well first before adding the other ingredients. I also needed to microwave it for 3 minutes to cook it all the way through. So yummy!

I am just posting to add that I used frozen blueberries without a problem. Wasn't cooked enough after 2 minutes, but I inverted on a plate and gave it 1 more minute. Perfect!

This was the best of the paleo muffins I've tried so far! I used 1/2 the amount of baking soda and no salt because the soda taste has been so strong in these types of recipes and I don't like the taste that gives off, and it worked out just fine. It did have an egginess to it, but it was so delicious. Thanks for posting!
