Chia Seed Coconut & Spinach Smoothie

Now that I am no longer pregnant (yeay for that), I could not be more motivated to get back to the old me and get back to my pre-pregnancy self. Since I am not able to start working out for at least a couple more weeks, I am trying really hard to make sure my diet is the best it can possibly be. I have been experimenting with a ton of low carb but nutritionally dense smoothies lately and this one has been making its way into my diet almost daily. Even my almost two year old Max asks for "sips." That's a good sign right?!

Ingredients:
  • 1 and 1/4 cup of coconut milk
  • 2 tbs of chia seeds
  • 1 cup of spinach
  • 1 scoop vanilla protein powder (I use designer whey french vanilla)
  • 2 ice cubes

*I also add a few dashes of powdered stevia to mine to give it a little extra sweetness.

Directions:
Add all the above ingredients into a blender or magic bullet and blend until you have a nice smoothie like consistently. Enjoy right away.

For you carb counters out there, this entire smoothie has only 5 grams of effective carbohydrate. The added chia seeds are packed with protein and antioxidants, and since they expand when wet this little treat will keep you feeling full and satisfied.

Mmmmm, this sounds very tasty! I've really been getting into green smoothies lately and this will be another recipe to add into the mix! I LOVE coconut so I can see this becoming a favorite :)

Do the seeds bother you? I added some to our smoothies last week and I couldn't get over the seeds. I choked them down since they were good for me, but it wasn't awesome!

Nicole- chia seeds are my favorite...so no they did not bother me at all. Plus, once they come in contact with any kind of liquid they start to become gelatin like and make the smoothie that much better.

Sounds delicious! Whole Foods carries a drink with Chia Seeds in it...doesn't bother me at all, while hubby and youngest think they are gross! LOL They don't like the texture. I agree, very similar to gelatin.

I stumbled across your site a few weeks ago and I've started checking here and there since then! You seem like such a sweet person, and your simple recipes are great. We made the cauliflower poppers the other night and they were a hit! This smoothie also looks pretty darn awesome. :)

Looks yummy - that's definitely a better way to drink Chia seeds than how we've been doing it (water, honey and lemon juice). I will pass your recipe along to my hubby, I'm sure he'll enjoy it!

Is this a recipe for two smoothies? It shows it in the photos and I did a quick calorie check on the recipe and it is about 400 calories with light coconut milk. Or does this make one?

Hi there I hope you can help me.

Today I started my low carb/high fat diet and decided I would use a variation of your recipe above as my breakfast smoothie. I made the smoothie using the following ingredients:

200ml of Coconut milk
2 TBsp of Chai seed
30g of Spinach leaves

Before I had finished drinking my smoothie (I had drunk about half) I began experiencing very bad stomach pains, this was followed by nausea and loose bowel movements.

The coconut milk that I used was canned and the only ingredients listed on the can are: coconut extract (75%) & water.

I assume the can probably has BPA but would that cause such a severe and sudden reaction?

I am not accustomed to drinking coconut milk but did introduce coconut oil (organic, cold pressed, extra virgin) in to my diet a while ago with no adverse effects.

I do not suffer from IBS or other digestive issues, as far as I am aware.

Do you have any idea as to what the issue may be? Does my body need to get used to the coconut milk or high fat consumption? Would switching to almond milk help?

I hope I don't have to cut coconut milk from my intended diet plan completely. I have made a batch of chai pudding using coconut milk but I am a bit afraid to eat it due to how awful I felt after the smoothie.

Any advice would be much appreciated.
