Pan Seared Honey Citrus Scallops

Ian has working his butt off at work so I decided to make him a celebratory dinner to show him how proud of him I am. Scallops it is!

Scallops fit into the "fancy" category. This was my first time ever cooking scallops. As usual when I opened up the little brown package I started wondering things like... are they still alive like the clams were??! Do they have brains? I still have not figured out it they are still alive or not BUT they do not have brains or a central nervous system. Good to know. I don't like eating brains or central nervous systems.

I made a marinade that consisted of:
  • 3 tablespoons of fresh squeezed lime juice
  • 2 tablespoons of coconut oil
  • 2 tablespoons of honey
  • 2 tablespoons of liquid aminos (a natural soy sauce alternative)
  • A couple dashes of pepper
I let the scallops marinate in the mixture for a few hours in the fridge. I then pan seared them on the stove until they were cooked all the way through.

Picked some fresh basil from the garden as a "garnish." I know fancy right! ha!

Topped them with basil and Italian bread crumbs. They were delicious!!

Ian is the type of guy who asks our waitress what the best, "biggest portion" meal on the menu is. When he saw these he said, "Aw babe what a great appetizer, what did you make for dinner?" Haha!! Well needless to say I ran off to the grocery store to get more food.

That looks delicious Lindsay. Scallops aren't something I cook a lot of. Maybe for a dinner party. I'm not that keen on them. I don't dislike them. Just like a whole lot of other things better. I'd prefer a nice piece of fish over seafood any old time. Men, huh? They're so precious. Can never feed them enough meat. LOL

I am quite impressed because I would definitely call scallops fancy too. And your presentation is so pretty! Double points :) Super relieved to know they don't have a brain or CNS - you crack me up!

Ha, I think of scallops as "fancy" too! I often choose that at a restaurant because I haven't been brave enough to try them at home. Your's look delicious! Might be a good "surf and turf" special dinner. :)

Oh. My. Goodness. These sound so unbelievable. I love scallops!! If it were up to me I'd have them every day. I can never seem to cook them properly though! I need some scallop lessons from you. But anyway, I'm sure he loved this meal! Yum!

I've only had scallops once, and they were pretty good. I'd be too afraid to make them myself, but maybe when I get the courage, I'll use your recipe. They look really good! And Ian sounds just like my boyfriend...he'd be like "is this it?" :)

Wow! These look amazing!! Love the light dressing you used...when scallops are used with creamy dressings, it gets too heavy. Definitely want to try this asap!! :)

Ha ha! That sounds exactly like my hubby! As a matter of fact, earlier I told him I was making chicken quesadillas for supper - not to think that was his before supper snack! I have never eaten scallops, let alone cood them, but they looked beautiful! Thanks for sharing!

Ahahha! That was SOOO funny! Did he honestly think you just made appetizers or was he teasing you (while getting his point across)? I read this as I was curling my hair, laughed and read it aloud to my family, who also enjoyed it.

Are you not just the most lovely wife ever. I think it's a testament to you that you acknowledge when your hubby is working hard! :) I loved your thought comments on them not having brains and central nervous systems (phew!) as I couldn't stomach them either if they did. The dish looked delicious and I am inspired to give scallops a go now.

Those look amazing! I need to try your recipe - I love scallops but my one attempt at making them had our house smelling for days. :) Your story cracked me up too - mainly b/c I made ceviche on vacation and shelled my first shrimp. Uncooked. Gross.
