strawberry yogurt muffins

I never want to paint a picture that my life is all dandelions and rainbows. I have bad weeks. This week was one of them. I wore myself too thin and feel pretty burnt out. To top it off Max is teething, miserable and running a low grade fever.

Sooooo anywhoo about the strawberries. There is a fresh strawberry stand by my house and I decided a frozen strawberry daiquiri sounded pretty fantastic. I was also desperately craving carbs...so i stopped and picked up a flat. SO that is how the strawberry yogurt muffin was born.

What you will need:
  • 2 cups of fresh strawberries
  • 2 cups of whole wheat flour
  • 1 tbsp of baking soda
  • 1/4 cup of sugar
  • 1 1/4 cup of plain Greek yogurt
  • 2 egg whites
  • 2 tbs coconut oil
  • 1tsp of vanilla extract

Directions:
  1. Preheat oven to 350 degrees.
  2. Stir together all the dry ingredients.
  3. In a blender puree one cup of strawberries.
  4. In a separate bowl beat the egg whites. Add the yogurt, strawberry puree, oil and vanilla extract. Combine with dry ingredients. Chop up the remaining strawberries and add to batter.
  5. Spoon the batter into the muffin pan. Bake for about 15 min.

If your week is slightly suck-y these will definitely help, or if you are just craving carbs these will do the trick.

They look so yummy Lindsay. I never think about doing Strawberry Muffins because luckily both of my kids love fresh strawberries and they get eaten quicker than I can use them in baking. It's just coming into strawberry season now here and they're just beautiful. I live in a strawberry growing area and we have a "Strawberry Festival" every year, which is always a good day out. We've got quite a few 'pick your own' farms which I'm going to take the kids to. I'm sure more will go in their mouths than the bucket! LOL

Hope next week is a better week for you and Max gets through his teething. (It's all a distant memory for me now but it wasn't so good at the time. This too shall pass.)

I can so relate about being run down - I do find that carbs always help :) Good luck with teething, H got like 3 in one week awhile back and it was a nightmare. Hope you get some rest this weekend.

Sorry your week sucked. I hate it when that happens. Grouchy critters don't help in the draggin' ya down department either.

I'm saddened to read about your week.
I've been having a few rough ones myself recently. It's hard because there's not one thing to complain about (and thus fix). It's just a general weariness. But I think Strawberry Muffins would help. Be my neighbor?

Hi Lindsay. Wondering if you have tried this recipe with any other types of flour; coconut, almond meal, brown rice? I was hoping to try these muffins, but I'm looking to cut out wheat in hopes of better skin. I used 1/2 cup coconut flour and increased to 4 egg whites. Also used Xylitol instead of sugar. Might have to make the recipe with your ingredients to see how they should taste. They look delicious!

Hello! I plan on re-doing this whole recipe soon to make it gluten free so stay tuned :) As far as off the top of my head if you want to make these now you could always try almond meal.

I love your site! Quick question: I just attempted to make these but substituted raspberries. I'm not sure what I did wrong, but I wanted to check to see if it was 1 tbsp of baking soda and 2 tbsp of coconut oil? Thanks!
